Perforated trays put controlled openings into the standard gastronorm format so steam, drain water or hot air reaches the product uniformly. The engineering content is the hole pattern: diameter, pitch and open-area percentage decide steam distribution, draining speed and whether fries sag through — patterns of roughly 15–40% open area cover most kitchen duties, with solid margins where rigidity or handling strength is needed. CNC turret punching keeps hole position consistent across reorder lots (which is what makes stacking and steam flow repeatable), and laser cutting serves low-volume custom layouts. Because the base remains EN 631 geometry, perforated trays interchange with solid pans in the same steam table or combi oven. Manufacturers listed here punch or laser standard GN sizes and custom outlines, add reinforced rims for loaded stacking, and match anti-jam rim designs so mixed fleets of solid and perforated pans separate cleanly.
